One-Pan Sweet & Spicy Cashew Pork Tacos

    Wash and dry all produce. Quarter and juice lime . Pick cilantro leaves from stems and set aside.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add ground pork and garlic powder . Cook, breaking up meat into pieces, until browned and almost cooked through, ⏱️ 5 minutes . Carefully drain any excess grease from pan.

    Add hoisin sauce , gochujang sauce , and water to the pan with pork. Cook, stirring often, until sauce has thickened and pork is cooked through, ⏱️ 3 minutes . Turn off heat; stir in cashews and a squeeze of lime juice. Season with salt and pepper if desired.

    While pork cooks, toss coleslaw mix in a medium bowl with mayonnaise , sugar , a squeeze of lime juice, and a pinch of salt and pepper.
